Filipino culinary icon and co-owner of Gallery by Chele, Chef Carlos was already passionate about cooking when he was only 10 years old. His early passion eventually landed him in the kitchens of some of the most celebrated restaurants in the world, including Arzak, Atzurmendi, Mugaritz, and Nerua, where he explored a diverse gastronomic landscape of flavors, ingredients and techniques. Yet apart from incredible food, Chef Carlos brings something special to the table – in-depth knowledge of the F&B industry including its processes, operations and elements that make for a successful restaurant business.
